Rule #1: Do not use water! 

Why? 

• Excess moisture compromises the taste and texture of the mushroom. 

Tips: 

• Instead, clean off any patches of dirt with a dry paper towel or a pastry brush. 

• Remember to store mushrooms in a paper bag in the refrigerator.
