Ina’s Shrimp Scampi

Ingredients


2 Lbs. 12-15 Count Shrimp

6 Tbsp Extra Virgin Olive Oil

4 Tbsp White Wine (Pinot Gris)

4 tsp Kosher Salt 

2 tsp Fresh Cracked Black Pepper

8 Large Garlic Cloves

1 ½ stick Unsalted Butter

1large Shallot 

6 Tbsp  Italian Parsley Rinsed

1 tsp Red Crushed Red Pepper 

½ Tbsp Lemon Zest 

2 Lemons 

1 Egg Yolk 

⅔ cup Italian Breadcrumbs

⅔ cup Panko Breadcrumbs 

Preparation


Let’s Get Started 

  • Let’s start off by cleaning our shrimp. Start by de-veining and butterflying the shrimp. I also like to pat them dry with paper towels before I marinate them.

An Easy Marinade

  • In a large bowl add 6 Tbsp of Olive Oil, 4 Tbsp White Wine, 4 tsp Kosher Salt, 2 tsp Fresh Cracked Black Pepper. Microplane 4 Garlic Cloves, whisk until combined, and add the shrimp.

  • Ensure the shrimp are completely coated in marinade.

  • Cover with plastic wrap and refrigerate for at least 30 minutes to an hour.

An Incredible Topping 

  • Let’s prep all the ingredients for the topping.

  • Take butter out of the refrigerator so it has time to come up to room temperature.

  • Mince 4 Garlic Cloves.

  • Dice 1 Large Shallot.

  • Chop 6 Tbsp Italian Parsley.

  • Zest one lemon until you have about ½ Tbsp, then juice the lemon in a separate container. 

  • Separate the egg, you will only need the egg yolk.

  • Measure out ⅔ cup of Crushed Red Pepper Flakes.  

  • Measure out ⅔ cup of Italian and panko breadcrumbs.

  • Once you have everything in place, add them to a large bowl: add the unsalted butter, minced garlic, diced shallot, chopped parsley, red pepper flakes, lemon zest, lemon juice, and egg yolk. Then mash and mix with a fork.

  • Once everything is evenly mixed, incorporate the Italian and Panko Breadcrumbs until combined.

Turn up the Heat!

  • Preheat the oven to 420°F

  • In a Gratine dish or casserole dish (make sure its oven safe), place the marinated shrimp with tails standing up in a spiral pattern. Then add the extra marinade to the dish.

  • Top the shrimp off with the crumb topping. I like elevate the tails so you can see where the shrimp are underneath the breadcrumbs.

  • Bake in the oven for 9-10 minutes.

  • Then change the setting to broil for 2 minutes.

  • Must serve with an extra lemon squeeze. Enjoy!
